Plan B Camp Lunch: Vegetarian Burrito Bowls at Lilyvale Waterhole

Sometimes the best camp meals are the unplanned ones.

While camping at Lilyvale Waterhole, lunch took a sharp left turn after a fridge mishap ruled out the original plan. Instead of forcing it, we pivoted to a simple vegetarian burrito bowl — and honestly, it might’ve been better than the original idea.

This Teardrop Tucker episode is all about:

  • Cooking with limited fridge space
  • Making meat-free meals that still feel filling
  • Using flexible ingredients you can swap in and out on the road

The burrito bowls come together with basics like rice, lentils, black beans, capsicum, onion and lettuce, cooked under the gazebo to keep the wind at bay. Yolinda also shares a great tip for getting a more “meaty” texture from vegetarian ingredients — perfect if you’re not usually sold on meat-free meals.

If you’re travelling for a while and don’t want to rely on fresh meat every stop, this is a cracking little lunch to keep in your back pocket.
