Cooking at camp usually means sticking to the tried-and-true, but this night at Stanlyn Park HipCamp we decided to wing it.
With rain rolling in and a fire looking unlikely, we had a crack at lamb kofta — camping-style. We’ve never cooked it before, and we hadn’t even eaten it at home, so this was very much an experiment.
From kneading mince by hand (turns out that bit actually matters), to shaping makeshift kofta and hoping they’d hold together in the pan, it was a proper learn-as-you-go cook-up.
Surprisingly, everything worked. The kofta stayed together, the flavours were spot on, and it turned into one of those camp meals that punches well above expectations — even with rain hovering in the background.
It’s a good reminder that some of the best camp meals come from trying something new, even when conditions aren’t perfect.
